Zero-Carb Pizza

This is for those dieters that are trying to eliminate carbs.  It’s pretty amazing!

  • 7 cups shredded mozzarella
  • 7 eggs, beaten
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon dried basil

Mix and spread on ungreased cookie sheet.  Bake at 450 degrees for 15 minutes.  Add toppings and bake 10 minutes more.

(I personally think that after I put the pepperoni on it, it baked too long.  So use your own judgement on how long to bake it.  I also think you could use low-fat cheese so it isn’t greasy.)

Reuben Dip

This was another big hit at our New Year’s/Birthday Party.  It was outstanding!!  It makes quite a large batch, but it was all gobbled up.

  • 1 (16-oz.) jar sauerkraut, drained and rinsed
  • 1/2 pound deli-style corned beef, shredded
  • 1 (8-oz.) pkg. cream cheese softened
  • 1 (8-oz.) pkg. shredded Swiss cheese
  • 1/4 cup Thousand Island salad dressing

Combine all ingredients in a slow cooker*.  Cover and cook on high setting for 45 minutes, stirring occasionally, just until heated through and cheese is melted.

* I didn’t put mine in a slow cooker.  I put it in a baking dish and put it in the oven at 300 degrees for 30 to 45 minutes until it was heated through.  I also stirred it occasionally.

Serve this with party rye slices.

Makes 6 to 7 cups.

Bacon Wrapped Smokies

Bacon Wrapped Smokies

This was one of the appetizers I made for our New Year’s/Birthday Party.  They went over very big.  Very easy three ingredient recipe to make.

  • 1 pound sliced bacon, cut into thirds (not thick cut)
  • 1 (14-oz.) pkg. beef cocktail wieners
  • 3/4 cup brown sugar, or to taste

Preheat oven to 325 degrees.

Wrap each cocktail wiener with a piece of bacon and secure with a toothpick.  (It is easier to wrap wieners with cold bacon, so keep it in the refrigerator while working with a third of it.) Place on a large baking sheet.

Sprinkle brown sugar generously over all.

Bake for 40 minutes, until sugar is bubbly.  To serve, place the wieners in a slow cooker and keep on the low setting.

Bacon-Cheese Dogs

  • Hot dogs
  • Bacon (not thick sliced)
  • String cheese (or similar stick cheese)

Slice cheese lengthwise into four pieces.  Cut a slit in each hot dog, from one end to the other, without cutting through the bottom.  Insert one piece of cheese into the slit of each hot dog.  Wrap in bacon; secure with toothpicks.  (I didn’t because I grilled them in my grill pan in the house.)  If grilling outside, you will want to use the toothpicks.

Grill until bacon is cooked through.

Yum!

Quick Rhubarb Cake

This is somewhat of a pudding cake.  Rich and heavenly!

  • 1 box yellow cake mix
  • 3 cups thinly sliced rhubarb
  • 1/2 cup chopped nuts, opt.
  • 1 cup sugar
  • 2 cups heavy cream

Mix cake as directed on box and pour into greased and floured 9 x 13-inch baking pan.  Sprinkle rhubarb and nuts over cake batter.  Sprinkle sugar over rhubarb and nuts.  Pour unwhipped cream over top.  Bake in 350 degree oven for 40 to 45 minutes.

Bacon and Tomato Dip

Bacon and Tomato Dip

This dip is addicting.  If you want to make it BLT Dip, serve it in a hollowed-out lettuce bowl.

  • 1 lb. bacon, crisply cooked and crumbled
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 2 tomatoes, chopped*
  • Chopped fresh chives, optional

Blend together bacon, mayonnaise and sour cream.  Stir in tomatoes and chill.  Sprinkle with chives.

Serve with crackers, herbed bagel chips or tortilla chips.

Makes 2 1/2 cups.

* I removed all seeds from tomatoes and used all membrane to chop up.

I have been making this appetizer for 40 years.  It is so good!!

  • 1/2 cup soy sauce
  • 1/4 cup sherry
  • 1 pound chicken livers
  • 1 pound bacon, cut in half
  • 1 (8-oz.) can sliced water chestnuts, drained

Mix soy sauce and sherry.  Marinate chicken livers for at least three hours.  Remove livers from marinade and cut into three portions.  Wrap a piece of chicken liver and water chestnut in a piece of bacon.  Secure with a toothpick.  Place appetizer on a foil lined baking sheet.  Bake at 400 degrees about 10 minutes and then turn over and bake for another 10 minutes.  Place on paper towels to cool slightly and then serve.

Two ingredient cookie!!  How easy is that?  I didn’t measure my Nutella and I think I got it a little thick in spots, but all I can say is “Yum”.

  • 16.5-oz. pkg. Refrigerated Sugar Cookie Dough
  • 1/3 cup Nutella

Roll sugar cookie dough into a 11 by 8-inch rectangle between 2 sheets of parchment paper.  Remove top parchment and spread with Nutella, leaving 1/4-inch border at edges.

Working from short side, roll dough tightly into a log and pinch seam; wrap in plastic wrap and freeze for 20 minutes.  Slice into 1/2-inch-thick cookies.

Place cookies 1 inch apart on parchment-lined baking sheets.  Bake in 350 degree oven until lightly golden, about 12 minutes.

Makes 16 cookies.

These are finger lickin’ good.

  • 4 – 5 lbs. baby back ribs (2 racks)
  • 1/3 cup Italian salad dressing
  • 1 1/2 (18-oz) bottles barbecue sauce (We love Bull’s-Eye Original)
  • 1 (26-oz) jar spaghetti sauce
  • 1 1/4 cups brown sugar

Using heavy-duty foil, line a big roasting pan, and lay ribs on foil.  Mix dressing and sauces and pour over ribs, then sugar over all.  (Use 2 pans if necessary; just be sure ribs are mostly covered with sauce.)  Bake uncovered at 250 degrees for 6 hours.

Country Club Bacon Bites

I have made these for a couple of parties now and they are devoured instantly.  In the picture, the light colored ones are Parmesan cheese and the dark colored ones are brown sugar.  I have never tried blue cheese, but I think they would be good too.  These are very easy to make but take quite a long time in the oven.  Maybe that’s why they are so good.

  • 1 pound bacon, cut in half
  • Grated Parmesan cheese or brown sugar
  • Club crackers

Preheat oven to 250 degrees.

Lay the crackers face up on a large rack over a baking sheet.  Scoop 1 teaspoon grated Parmesan or brown sugar onto each cracker (I used a packed teaspoon).  Carefully wrap a piece of bacon around cracker, completely covering.  It should fit tight but not too taut.  Place the bacon-wrapped crackers onto the rack.  Bake for 2 hours.  Serve immediately warm or at room temperature.

Makes approximately 36 crackers.
