Foolproof Hard-Cooked Eggs

This is a never-fail way to cook eggs.  They turn out moist with creamy yolks and firm yet tender whites.  There is no trace of a green ring.  Make as few or as many eggs as you need.

Use a pot large enough to hold eggs in a single layer, cover with 1 inch water, and bring to boil over high heat.  (Don’t overcook.)  Remove pan from heat, cover, and let sit 10 minutes.  (Set a timer)

Meanwhile, fill a bowl with cold water and several ice cubes.  Transfer eggs to ice water bath with slotted spoon; let sit for at least 5 minutes, so they are really cold.  Peel eggs.

Eggs peel real easy when they are very, very cold.

When you don’t have onions on hand for a recipe, these are good substitutions.

  • 1 small onion is 1/3 cup chopped or 1 teaspoon onion powder or 1 tablespoon dried minced onion
  • 1 medium onion is 2/3 cup chopped or 2 teaspoons onion powder or 2 tablespoons dried minced onion
  • 1 large onion is 1 cup chopped or 1 tablespoon onion powder or 3 tablespoons dried minced onion

I’ve decided to put this recipe on here so I don’t have to look it up every time I need self-rising flour.  I don’t use self-rising flour very often, so making my own is easier and I don’t have to worry about it getting old.

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda

Stir or sift together flour, salt and baking powder and baking soda you have self-rising flour.

Copycat Lipton’s Onion Soup Mix & Onion Dip

Because I get headaches when I eat anything with MSG in it, I was so glad to find this recipe to use in place of buying a package of it.

  • 3/4 cup instant minced onion
  • 1/3 cup beef bouillon powder (no MSG)
  • 4 teaspoons onion powder
  • 1/4 teaspoon crushed celery seeds
  • 1/4 teaspoon sugar

Combine all ingredients and store in an airtight container.

About 3 tablespoons of mix are equal to a 1 1/4-oz. package.

To make onion dip:  Mix 3 tablespoons with one pint of sour cream.
