Chocolate Cake in a Mug

I made this for myself for Valentine’s Day.  My husband isn’t much into chocolate so I just made it for me.  Very moist and delicious!

  • 3 tablespoons all-purpose flour
  • 2 tablespoons brown sugar
  • 2 teaspoons cocoa powder
  • 1/4 teaspoon baking powder
  • 3 tablespoons milk
  • 1 tablespoon canola oil
  • 1 drop vanilla extract
  • 10 semi-sweet chocolate chips

In a 1-cup capacity mug or cup, whisk (or use a fork) flour, sugar, cocoa powder and baking powder.  Add the milk, oil and vanilla.

Whisk until the batter no longer has lumps.  Sprinkle with chocolate chips.

Cook cake in microwave for 45 seconds.  Let cool for 5 minutes to allow for the cake to finish cooking.

Serves 1.

Note:  If you want to triple or quadruple the recipe for more servings, combine the ingredients in a bowl.  Then pour into your mugs.  Remember, you have to cook cakes one by one in microwave for uniform cooking.

Baked Chicken Breasts (Microwave)

These were so moist and delicious.  Really quick and easy.  (If you don’t marinate them very long.)

  • 4 to 6 boneless, skinless, chicken breast halves
  • 1 cup sour cream
  • 2 tablespoons lemon juice
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon celery salt
  • 1 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon red pepper , opt.

Rinse and dry chicken breasts with paper towels.  In a 2-qt. dish, combine sour cream, lemon juice, Warcestershire sauce, celery salt, paprika, garlic powder, salt and pepper.  Add chicken to sour cream mixture, coating each piece well.  Let stand, covered, in refrigerator overnight, or at least 8 hours.  (I only marinated mine for 3 – 4 hours and it was still delicious.)

  • 1 cup seasoned bread crumbs
  • 1/4 cup butter, melted

Carefully remove coated chicken from sour cream mixture.  Roll in crumbs, coating evenly.  Arrange single layer in an 8-inch square shallow baking dish.  Micromelt butter in a 1-cup measure on HIGH 1 minute and drizzle over chicken.  Microwave on HIGH 10 minutes or until chicken is tender.

Serves 4 to 6.

Cowboy Burritos

This is the quickest lunch that I have ever fixed.  My grandson was here today and we made these for the three of us (husband included).  They were delicious!

  • 1 (15-oz.) can chili with beans
  • 8 medium flour tortillas
  • 8 Co-Jack cheese sticks

For each burrito, spread 1/4 cup chili down center of tortilla.  Place 1 Co-Jack cheese stick on top of chili.  Fold sides toward center over cheese stick; roll up from bottom.  Place seam-side down on microwave-safe plate.  Microwave at HIGH 1 minute for one burrito.  2 to 3 minutes for 4 on the plate, rotating after 1 1/2 minutes.  Let stand 2 minutes before devouring.  Serve with salsa, sour cream, guacamole, if desired.

This is another recipe that is fabulous.  A good recipe to use up some of your turkey leftovers after Thanksgiving.

  • 1 (17-oz.) pkg. broccoli florets, thawed
  • 2 cups diced cooked chicken or turkey (Canned chicken or turkey works also)
  • 8 oz. shredded Cheddar cheese
  • 1 (12-oz.) can evaporated milk or 1 1/2 cups half and half
  • 1 (10 3/4-oz.) can cream of mushroom soup, undiluted
  • 1/3 cup grated Parmesan cheese
  • Paprika

Arrange broccoli in a lightly grease 9 x 9-inch baking dish; top with chicken.  Place cheese over chicken.

Combine milk and soup, stirring well.  Pour mixture over cheese.  Bake at 350 degrees for 30 minutes.  Sprinkle with Parmesan cheese and paprika.  Bake an additional 5 minutes.

Yield:  4 to 6 servings

Microwave Directions:

Follow directions above.  Microwave at HIGH for 9 to 10 minutes, giving dish a half-turn after 5 minutes.  Sprinkle with Parmesan cheese and paprika.

Easy Baked Chicken Breasts

This is a fabulous recipe that I have been making for years.  I sometimes use shredded cheese and use 1/2 cup wine for more sauce.  Also, add more stuffing mix and butter.  It always gets gobbled up.  Serve with “Easy Succotash” and “Wash Day Peach Cobbler”.

  • 8 (6 to 8-oz. each) boneless skinless chicken breast halves
  • 8 slices Swiss cheese (I like Cheddar)
  • 1 (10 3/4-oz.) can cream of chicken soup or cream of mushroom soup, undiluted
  • 1/4 cup dry white wine or water
  • 1 cup herb-seasoned stuffing mix, crushed
  • 2 to 3 tablespoons butter, melted
  • Parsley (optional)

Arrange chicken in a lightly greased 8 x 12-inch baking dish.  Use larger dish if using larger chicken breasts.  Top with cheese slices.

Combine soup and wine; stir well.  Spoon sauce over chicken; sprinkle with stuffing mix.  Drizzle butter over crumbs; bake at 350 degrees for 45 minutes.  Garnish with parsley, if desired.

Yield:  8 servings

Microwave Directions:

Follow directions above.  Cover with wax paper, and microwave at HIGH for 18 to 20 minutes; let stand 5 minutes.  Continue microwaving briefly if not done after standing.

Delicate Lemon Cookies

These cookies are so quick and easy to make.  Years ago my daughter had a little cookie business and sold cookies and bars to my friends for the holidays or a special party.  These cookies were a big hit.  We sure did make a lot of them.

  • 1 2/3 cups all-purpose flour
  • 1/4 cup plus 2 tablespoons sifted powdered sugar
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cream of tartar
  • 3/4 cup finely chopped pecans
  • Grated rind of 1 whole lemon
  • 2/3 cup butter
  • 1/2 teaspoon lemon extract
  • Additional powdered sugar

Combine first 6 ingredients in a large bowl; stir well.

Place butter in a 2-cup glass measure.  Microwave, uncovered, at LOW (10% power) for 1 to 2 minutes or until softened.  Add butter and extract to flour mixture.  Knead until mixture is well blended and forms a soft dough.

Shape dough into 30 (1-inch) balls.  Arrange 10 balls on a wax paper-lined 12-inch round glass platter.  Microwave, uncovered, at MEDIUM (50% power) for 5 to 7 minutes or until cookies are firm, rotating a quarter-turn every minute.  Let cookies cool on platter 2 minutes.

Transfer cookies to wire racks.  Sift powdered sugar over warm cookies, and let cool completely.  Repeat procedure twice with remaining cookie dough and powdered sugar.  Store cookies in an airtight container.

Yield:  2 1/2 dozen.

I served this with Yankee Corn Bread and it made a real good supper.

  • 2 (16-oz.) cans pork and beans
  • 1 pound frankfurters, cut into 1/2-inch pieces
  • 1 medium onion, chopped fine
  • 1/2 cup ketchup
  • 1/2 cup molasses
  • 1 tablespoon prepared mustard
  • 1/4 teaspoon liquid smoke
  • 1/8 teaspoon hot sauce

Combine all ingredients; stir well.  Spoon mixture into a lightly greased 8-inch square baking dish.  Bake, uncovered, at 350 degrees for 50 to 60 minutes, stirring after 30 minutes.  Yield:  4 to 6 servings.

Microwave Directions:  Combine all ingredients; stir well.  Spoon mixture into a lightly greased 8-inch square baking dish; cover dish loosly with wax paper.  Microwave at HIGH for 20 to 25 minutes or until mixture is desired thickness, stirring every 5 minutes.

Faster Baked Potatoes

If you don’t have the time to bake your potatoes for an hour, try this method.  Your potatoes will be done in half the time.  If you have really large potatoes, you might want to microwave them 8 minutes on each side.

  • 4 baking potatoes

Scrub your potatoes and prick with fork several places all over your potato.  Microwave your potatoes for 8 minutes on high.

Then put in 450 degree oven and bake for 20 minutes.

Overnight Tuna Casserole

This may be the easiest tuna and pasta casserole you’ve ever made.  There’s no need to cook the macaroni… just mix, refrigerate overnight and microwave.  Serve with a tossed green salad.

  • 1 can (10 3/4-oz.) cream of celery soup, (or mushroom or chicken)
  • 1 soup can milk
  • 2 can (5-oz.) water-pack tuna, drained and flaked with a fork
  • 1 cup uncooked elbow macaroni
  • 1 cup frozen green peas
  • 1/2 cup minced onion or 2 tablespoons dried minced onion
  • 1 cup shredded Cheddar cheese (reserve 1/4 cup)

Whisk soup and milk in a 2-qt. microwave-safe bowl until well blended.  Stir in remaining ingredients except reserved 1/4 cup cheese.  Cover and refrigerate at least 12 hours or overnight.

Cover with lid or vented plastic wrap.  Microwave on high 15 to 17 minutes until bubbly.

Sprinkle with reserved cheese.  Let stand uncovered 5 to 7 minutes until cheese melts.

Make 4 servings.

Easy Corn on the Cob

Easy Corn on the Cob

  • 2 large ears of sweet corn, husks and silks removed
  • 1 teaspoon water

Place corn in a microwave safe dish.  Add water and cover with waxed paper or plastic wrap.  Pierce the paper several times and microwave on HIGH for 5-6 minutes.  Let stand in microwave for 1 minute to complete cooking.  Uncover, being careful not to get burned with the steam and enjoy!!
