Cowboy Burritos

This is the quickest lunch that I have ever fixed.  My grandson was here today and we made these for the three of us (husband included).  They were delicious!

  • 1 (15-oz.) can chili with beans
  • 8 medium flour tortillas
  • 8 Co-Jack cheese sticks

For each burrito, spread 1/4 cup chili down center of tortilla.  Place 1 Co-Jack cheese stick on top of chili.  Fold sides toward center over cheese stick; roll up from bottom.  Place seam-side down on microwave-safe plate.  Microwave at HIGH 1 minute for one burrito.  2 to 3 minutes for 4 on the plate, rotating after 1 1/2 minutes.  Let stand 2 minutes before devouring.  Serve with salsa, sour cream, guacamole, if desired.

Toffee Poke Cake

I had to make my own birthday cake this year.  That’s ok.  I love baking anyway and I wanted to try this recipe.  Oh my goodness it was so good!!  I got raves reviews from my family.  So very simple to make also.  The caramel oozes when you cut it.

  • 1 (18 1/4-oz.) pkg. chocolate cake mix
  • 1 (17-oz.) jar butterscotch-caramel ice cream topping
  • 1 (12-0z.) carton frozen whipped topping, thawed
  • 3 (1.4-oz. each) Heath candy bars, chopped

Prepare and bake cake according to package directions, using a greased 13-in. x 9-in. baking pan.  Cool on a wire rack.

Using the handle of a wooden spoon, poke holes in cake.  Pour 3/4 cup caramel topping into holes.  Spoon remaining caramel over cake.  Top with whipped topping.  Sprinkle with candy.  Refrigerate for at least 2 hours before seving.

This is a delicious appetizer for the holiday parties.

  • 8 oz. pkg. cream cheese, softened
  • 3 tablespoons prepared horseradish
  • 3 tablespoons chives, finely chopped
  • 1/3 cup sour cream
  • 1/4 teaspoon salt
  • 2 (6-oz.) cans boneless, skinless red salmon, drained

Mix all ingredients together in large bowl.  Serve in a pretty dish along with a variety of crackers.

Copycat Capellini Pomodoro

Copycat Capellini Pomodoro

This is a copy cat recipe from Olive Garden.  I fixed this today for my family.  What a quick and easy meal to fix at the last minute.  Everyone thought it was delicious.  I served this with Cheese Bread.

  • 16 ounces capellini pasta (angel hair)
  • 8 medium tomatoes, cut into 1/2″ pieces
  • 11 fresh basil leaves, chopped
  • 2 cloves garlic, chopped
  • 6 tablespoons olive oil
  • Salt and pepper to taste

Cook capellini pasta according to package directions.

Mix diced tomatoes, chopped basil, garlic and oil.  Season with salt and pepper.

Drain pasta.  Toss pasta with tomato mixture in a saute pan and heat throughout.

Serve immediately.

Serves 4 to 6.

This meal can be made in less than a half hour.

CoffeeTime Cinnamon Rolls

Coffee Time Cinnamon Rolls

You can make these delicious cinnamon rolls in less than 30 minutes and they go exceptionally well with your mid-morning coffee.

  • 1 (8-ounce) can Pillsbury crescent rolls
  • 4 tablespoons unsalted butter
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon

Remove dough from your can and unroll on counter.  Keep in rectangle and pinch seams together.  Brush butter over top of dough leaving 1/2 inch on edge.  Sprinkle brown sugar over top of butter and then sprinkle cinnamon over top of brown sugar.

Start rolling from the long side and try to roll it tightly.  Cut in 8 rolls and place each in a muffin tin.

Bake in a 375 degree oven for 10 to 12 minutes.  When they come out of the oven, turn them over onto a cookie sheet.

Makes 8 cinnamon rolls.

Classic Rhubarb Fool

Classic Rhubarb Fool

This is such an easy dessert to make and serve your guests.  Three ingredients!!

  • 1 lb. red rhubarb (about 4 cups)
  • 1 cup sugar
  • 3 cups heavy cream

Put rhubarb, sugar and 2 tablespoons water into a medium saucepan.  Cover, and bring to a simmer over medium-high heat.  Reduce heat to medium-low.  Stir once, and cook, uncovered, until rhubarb has completely softened, about 8 minutes.  Let cool slightly.

Transfer rhubarb mixture to a food processor, and puree until smooth.  Transfer to a small bowl.  Refrigerate rhubarb puree until cool, about 30 minutes.

Beat cream with an electric mixer or by hand until soft peaks form.  Gently fold rhubarb puree into the whipped cream in 2 batches, leaving some streaks remaining.  Spoon into glasses.

Serves 6 to 8.

Scrumptious Strawberry Pie

Scrumptious Strawberry Pie

Impress your friends with this scrumptious dessert.

  • 1 (14-oz) can sweetened condensed milk
  • 1/3 cup fresh lemon juice
  • 1 (12-oz) container Cool Whip, thawed
  • 1 qt. fresh strawberries, washed and sliced
  • 1 (9-inch) pie crust, baked

Whisk milk and lemon juice together till thick;  stir in Cool Whip.  Gently fold in sliced strawberries.  Spoon into baked pie crust.  Chill thoroughly (3-4 hours) before serving.

Serves 8.

Fried Corn

I am an Iowa farm girl and I love corn.  This recipe is delicious!

  • 4 slices bacon
  • 3 cups fresh cut corn (or frozen, thawed)
  • 1/4 cup diced sweet green pepper
  • 1/4 cup chopped onion
  • Salt and pepper to taste

Fry out the bacon and remove from skillet.  Drain off all but about 3 tablespoons bacon drippings and add remaining ingredients.  Cover and cook until corn is just tender – about 6 minutes.  Serve hot with crumbled bacon over the top.

Makes 6 servings.

Roast Beef Horseradish Rolls

Roast Beef Horseradish Rolls

These will fly off your platter they are so good!  Be sure to use really good roast beef.

  • 8 oz. pkg. cream cheese, room temperature
  • 3 tablespoons prepared horseradish
  • 3 tablespoons chives, finely chopped
  • 1/3 cup sour cream
  • 1/4 teaspoon salt
  • 24 thin slices rare roast beef

Blend all ingredients except roast beef.  Lay roast beef on a platter and spread each slice with a layer of the mixture.  Roll up each slice individually and secure with a toothpick.  These may be cut into smaller portions so they go farther.

Serves 10-12.

Creamy Baked Chicken Breasts

Creamy Baked Chicken Breasts

  • 8 boneless skinless chicken breasts
  • 8 slices Swiss cheese (or 8 oz. shredded cheese)
  • 1 can cream of chicken soup
  • 1 cup herb seasoned stuffing
  • 1/4 cup butter, melted

Arrange chicken in a 9″ x 13″ baking pan.  Top with cheese slices.  Spread soup evenly over all and top with stuffing.  Drizzle with melted butter.

Bake uncovered 45 to 50 minutes in a 350 degree oven.
