BLT Wraps

BLT Wraps

I believe this BLT is better than the original that is made on toast.  So simple, easy and delicious.  Microwaving the bacon is an easy cooking method.  You may want to make a double recipe as you probably can’t eat just one.

  • 12 thick-cut slices of bacon
  • 1/4 cup plus 1 tablespoon mayonnaise
  • 2 romaine lettuce hearts, leaves trimmed to 8 inches long
  • 1/2 to 1 pint cherry tomatoes, halved (I used grape tomatoes)
  • 4 (10-inch) flour tortillas

Place half the bacon on a double paper towel-lined plate.  Top with another layer of paper towels and place the other half of the bacon on top and then put another layer of paper towels on that.  Microwave until crispy, 8 to 10 minutes.

Put mayonnaise in a large bowl and add tomatoes and lettuce and toss to coat evenly.

Lay tortillas on counter and divide lettuce, tomatoes, and bacon among tortillas.  Roll tightly and serve.

Serves 4.

Chicken Salad with Grapes

Chicken Salad with Grapes

I love grapes in chicken salad.  Serve this as a sandwich or serve it on a bed of lettuce.  It’s so good!!

  • 5 cups diced cooked chicken
  • 1 teaspoon salt
  • 3 tablespoons lemon juice
  • 1 cup mayonnaise
  • 1 1/2 cups diced celery
  • 1 cup seedless grapes, halved
  • 1/2 cup toasted slivered almonds, optional

Combine chicken, celery, and grapes.  Add lemon juice and salt to mayonnaise; mix well.  Add the mayonnaise mixture and toss lightly,  Chill until ready to serve.  Sprinkle with almonds, if desired.

Sloppy Joes

Sloppy Joes

I grew up in Iowa where there were a lot of Maid-Rite Shops around.  We could never pass a Maid-Rite without stopping and having one.  They were basically loose meat hamburger with a few spices in it, which was top secret.  This recipe was originally named Maid-Rites, but it is more like Sloppy Joes than Maid-Rites.  Whatever you want to call them, they are pretty good.  You might want to make a double batch, especially if you have grandkids and a husband around.

  • 1 1/2 lbs. hamburger
  • 1 medium onion, finely chopped
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup ketchup
  • 1 teaspoon salt
  • 2 teaspoons yellow mustard
  • 2 teaspoons sugar
  • 1 tablespoon vinegar
  • Dash of pepper, opt.

Brown hamburger and onions together in skillet.  Drain off fat.  Then add the rest of ingredients.  Simmer for at least 30 minutes.  Serve on hamburger buns.

Serves 6 to 8.

Slow Cooker BBQ Chicken Sandwiches

Slow Cooker BBQ Chicken Sandwiches

These have a little zing to them but are delicious.  Leftovers are even better!

  • 6 frozen skinless, boneless chicken breast halves
  • 1 (12-oz.) bottle barbeque sauce
  • 1/2 cup Italian salad dressing
  • 1/4 cup brown sugar
  • 2 tablespoons Worcestershire sauce

Place chicken in slow cooker.  In a bowl, mix barbeque sauce, Italian salad dressing, brown sugar, and Worcestershire sauce.  Pour over the chicken.

Cover and cook 3 to 4 hours on high or 6 to 8 hours on low.  When done, shred chicken with two forks and mix altogether with the sauce.  Serve.

Makes 6 sandwiches.  (I served mine on a deli flat.)

Ham Salad Spread

Ham Salad Spread

Use this as a dip with crackers or make a delicious ham salad sandwich.

  • 1 pound lean ham, chunked
  • 3/4 to 1 cup mayonnaise
  • 1/4 cup sweet pickle relish

Put ham in food processor and grind until fine.  Put in bowl and add mayonnaise and pickle relish.  Mix all together.    Enjoy!

Tuna Burgers

Tuna Burgers

I have been making this recipe for years.  It isn’t the normal “burger” you would think of, but more of a tuna sandwich on a bun.

  • 4 ounces shredded Cheddar cheese (or cubed American)
  • 2 hard boiled eggs, chopped
  • 1 (7-oz.) can tuna, drained & flaked
  • 2 tablespoons chopped sweet pickle
  • 1/2 cup mayonnaise
  • 8 hamburger buns

Combine all ingredients.  Split buns and fill with mixture.  Wrap buns in foil and place in a 250 degree oven for 20-25 minutes.

Update:  I am changing the oven temperature to 300 degrees as these were getting warm inside, but not hot.  Choose whichever way you like them.

Makes 8 sandwiches.

Note added 3/4/2005.  Because they have downsized the tuna can, I used two 7-oz. cans.

Chicken & Egg Salad Sandwich

Chicken & Egg Salad Sandwich

  • 6 medium (4 oz. each) boneless, skinless chicken breasts, cooked and diced (1 1/2 lbs) or 2 (12-oz) cans chicken breast
  • 4 hard-boiled eggs, diced
  • 1/2 cup sweet pickle relish
  • 1/2 teaspoon salt
  • 1 cup mayonnaise

Mix everything together in a large bowl.  Serve on toasted bread.

Makes 10 sandwiches.

Pizza Burgers

Pizza Burgers

My kids grew up eating these and now my kids are making them for their kids.

  • 1 lb. lean ground beef
  • 3/4 teaspoon oregano
  • 3/4 teaspoon sage
  • 1/2 lb. Colby or Velveeta cheese, cubed
  • 1 (8-oz.) can pizza sauce
  • 8 oz. shredded mozzarella cheese
  • 8 hamburger buns

Brown beef and drain fat off.  Mix in rest of ingredients.  Open buns up on a cookie sheet and top with the meat mixture.  Bake in a 400 degree oven for 10 to 12 minutes.  Makes 16 open face sandwiches.

You could also cut these in wedges and serve as an appetizer.
