Olive Cheese Bread

Olive Cheese Bread

This disappeared so fast that my husband only got one piece.  I guess I will have to fix it again soon.  Yum, yum, yum.

  • 1 (14.5-oz) can black olives, drained and roughly chopped
  • 1 (6-oz) jar pimiento-stuffed green olives, drained and roughly chopped
  • 2 green onions, roughly chopped
  • 1 stick butter, softened
  • 1/2 cup mayonnaise
  • 16 oz. Monterey Jack cheese, grated
  • 1 loaf crusty French bread

Preheat oven to 325 degrees.

In a large bowl, combine the butter, mayonnaise, Monterey Jack cheese, chopped olives, and green onions.  Stir until thoroughly combined.

Slice the French bread loaf in half lengthwise.  Spread the olive-cheese mixture in an even layer on each half.

Bake for 20 to 25 minutes, until the cheese mixture is thoroughly melted and beginning to turn light brown and bubbly.  Cut into slices and serve immediately.

Note:  This can be flash frozen and then wrapped tightly and frozen for up to six months.

Heavenly Fruit Dip

Heavenly Fruit Dip

Delicious!

  • 1/2 cup sugar
  • 2 tablespoons flour
  • 1 cup pineapple juice
  • 1 egg, beaten
  • 1 tablespoon butter
  • 1 cup heavy cream, whipped

Combine sugar, flour, juice, egg, and butter in heavy saucepan.  Cook over medium heat, stirring constantly until smooth and thick.  Let cool completely.  Fold in whipped cream.  Serve with fresh fruit – especially good with sliced apples.

Use 1/2 cup orange juice and 1/2 cup pineapple juice instead of all pineapple juice.  Also use 2 cups nondairy whipped topping stead of 1 cup whipped cream.

Cinnamon Sugar Pecans

Cinnamon Sugar Pecans

Very easy and delicious.

  • 1 egg white
  • 1 teaspoon water
  • 1 lb. (4 cups) whole pecans
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon, opt.

Preheat oven to 250 degrees.  Lightly grease a 10 x 15-inch jellyroll pan.

Beat egg white and water in medium to large bowl until frothy but not stiff.  Add the nuts and stir until well coated.  In a small bowl, mix sugar, salt and cinnamon.  Then add this mixture to the nuts and stir until well coated.  Spread on the prepared pan.

Bake for 1 hour, stirring occasionally.  Allow to cool, then store in airtight container.

Use may use half almonds instead of all pecans.

Pizza Burgers

Pizza Burgers

My kids grew up eating these and now my kids are making them for their kids.

  • 1 lb. lean ground beef
  • 3/4 teaspoon oregano
  • 3/4 teaspoon sage
  • 1/2 lb. Colby or Velveeta cheese, cubed
  • 1 (8-oz.) can pizza sauce
  • 8 oz. shredded mozzarella cheese
  • 8 hamburger buns

Brown beef and drain fat off.  Mix in rest of ingredients.  Open buns up on a cookie sheet and top with the meat mixture.  Bake in a 400 degree oven for 10 to 12 minutes.  Makes 16 open face sandwiches.

You could also cut these in wedges and serve as an appetizer.

Baked Spinach – Artichoke Dip

Baked Spinach – Artichoke Dip

This appetizer is sooo good that it is requested (especially by my grandson, Nathan) at every family gathering we have.  Another word for it is “Fabulous”.

  • 1 (14-oz) can artichoke hearts, drained and finely chopped
  • 1 (10 oz) pkg. frozen chopped spinach, cooked and drained
  • 1 cup shredded Monterey Jack
  • 1/8 teaspoon garlic powder
  • Dash of cayenne pepper
  • 1 cup Parmesan cheese
  • 1 cup mayonnaise
  • Dash of Worcestershire sauce

Mix the above ingredients well, and spoon into a lightly greased 1-qt casserole dish.  Bake at 350 degrees for 20 to 30 minutes.  Serve with tortilla chips or crackers.
