Copycat Lipton’s Onion Soup Mix & Onion Dip

Because I get headaches when I eat anything with MSG in it, I was so glad to find this recipe to use in place of buying a package of it.

  • 3/4 cup instant minced onion
  • 1/3 cup beef bouillon powder (no MSG)
  • 4 teaspoons onion powder
  • 1/4 teaspoon crushed celery seeds
  • 1/4 teaspoon sugar

Combine all ingredients and store in an airtight container.

About 3 tablespoons of mix are equal to a 1 1/4-oz. package.

To make onion dip:  Mix 3 tablespoons with one pint of sour cream.

Ham Salad Spread

Ham Salad Spread

Use this as a dip with crackers or make a delicious ham salad sandwich.

  • 1 pound lean ham, chunked
  • 3/4 to 1 cup mayonnaise
  • 1/4 cup sweet pickle relish

Put ham in food processor and grind until fine.  Put in bowl and add mayonnaise and pickle relish.  Mix all together.    Enjoy!

Norwegian Parsley Potatoes

I just can’t resist potatoes of every kind.  These are so delicious!  And so easy!

  • 2 pounds small red new potatoes
  • 1/2 cup butter
  • 1/4 cup chopped fresh parsley

Cook potatoes in boiling salted water for 15 minutes or until tender.  Cool slightly.  With a sharp knife, remove one narrow strip of skin around the middle of each potato.  In a large skillet, melt butter; add parsley.  Add the potatoes and stir gently until coated and heated through.

Yield:  6-8 servings.

Jalapeno Popper Dip

Jalapeno Popper Dip

I tried this recipe for the first time last night for bridge and everyone just loved it!!

  • 2 (8-oz.) packages cream cheese, softened
  • 1 cup mayonnaise
  • 1 (4-oz.) can chopped green chilies, drained
  • 2 ounces canned diced jalapeno peppers, drained
  • 1 1/4 cups Parmesan cheese

Put cream cheese and mayonnaise in a mixer and mix until smooth.  Mix in green chilies, jalapeno peppers and Parmesan cheese.

Microwave for 3 minutes and then stir.  Microwave for another 3 minutes.  Serve with tortilla chips.

Note:  If you would like to bake it instead of microwaving it, put 1 cup of cheese in the mixute and 1/4 cup of cheese on top.  Bake at 375 degrees for about 30 minutes.

This is good even after it has cooled off.

Chicken & Egg Salad Sandwich

Chicken & Egg Salad Sandwich

  • 6 medium (4 oz. each) boneless, skinless chicken breasts, cooked and diced (1 1/2 lbs) or 2 (12-oz) cans chicken breast
  • 4 hard-boiled eggs, diced
  • 1/2 cup sweet pickle relish
  • 1/2 teaspoon salt
  • 1 cup mayonnaise

Mix everything together in a large bowl.  Serve on toasted bread.

Makes 10 sandwiches.

Breakfast Casserole

Breakfast Casserole

  • 6 eggs, beaten
  • 1 (12-oz) can evaporated milk
  • 1 teaspoon salt
  • 1 (30-oz) pkg. frozen shredded hash brown potatoes
  • 1 (8-oz) pkg. shredded Cheddar cheese
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 cup diced cooked ham

Whisk eggs, milk and salt in a large bowl.  Add remaining ingredients; mix well.  Pour mixture into a greased 9″ x 13″ baking pan.  Bake, uncovered, at 350 degrees for 60 to 65 minutes, or until eggs are set.
