Yankee Corn Bread

Unlike southern corn bread that has no sugar in it, this is a sweet corn bread.  It is a great accompaniment with chili on a cold and wintry day.

  • 1 cup flour
  • 1 cup cornmeal
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup milk
  • 3 tablespoons melted butter

Put dry ingredients into a bowl.  Beat eggs and stir in along with the milk and melted butter.  Spoon into a well-greased 8″ x 8″ pan and bake in a 400 degree oven for 20 minutes or until brown.  Makes 9 squares.
